Carrot Cupcakes

To go along with EVPL’s Best for Little Minds Storytime, enjoy creating Carrot Cupcakes from Creepy Carrots! by Aaron Reynolds.

Prep time: 20 minutes

Cook time: 20-25 minutes 


  • 1 ¼ cup flour
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¾ cup canola oil
  • 2 large eggs
  • 2 tbsp milk
  • 1 ½ tsp vanilla extract
  • 1 ½ cups grated carrots
  • ½ chopped walnuts (optional)


  1. Preheat the oven to 350 degrees. 
  2. In a large mixing bowl, mix together the flour, both kinds of sugar, baking soda, baking powder, cinnamon, and nutmeg. Whisk together until combined. 
  3. Stir in canola oil. Add the eggs, one at a time, making sure to scrape the sides of the bowl to incorporate all of the egg. Stir until well combined. 
  4. Stir in vanilla extract and milk. 
  5. Add carrots and walnuts (if using). Stir until combined. 
  6. Place 12 cupcake liners in your muffin tin. Fill each one about ¾ of the way full. 
  7. Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
  8. Enjoy! Top these with your favorite frosting or enjoy as is.
